Preheat your oven to 425°F. Line two large baking sheets with silicone baking mats.
Wash and dry the zucchinis. Slice them into thin rounds, about ⅛-inch thick.
Place slices in colander, sprinkle with 2 teaspoons salt, rest 30 minutes. Rinse and pat dry.
In a bowl, mix olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper.
Toss zucchini slices in mixture. Arrange on sheets, no overlap.
Bake for 12 minutes, flip, and bake additional 5-8 minutes until crispy.
Remove and let cool on baking sheets.
Notes
If you like a spicier flavor, add cayenne pepper or red pepper flakes. Store leftovers in an airtight container in the fridge for up to 2 days. Best eaten fresh.
