These crispy zucchini chips can be baked in the oven or air fried. They’re the perfect summer snack and have a delicious flavor.

- 2 medium zucchinis
- 2 ¼ teaspoons fine sea salt divided
- 2 Tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ¼ teaspoon ground black pepper

- Preheat your oven to 425°F. Line two large baking sheets with silicone baking mats.
- Wash and dry the zucchinis. Slice them into thin rounds, about ⅛-inch thick.
- Place slices in colander, sprinkle with 2 teaspoons salt, rest 30 minutes. Rinse and pat dry.
- In a bowl, mix olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper.
- Toss zucchini slices in mixture. Arrange on sheets, no overlap.
- Bake for 12 minutes, flip, and bake additional 5-8 minutes until crispy.
- Remove and let cool on baking sheets.
Notes
If you like a spicier flavor, add cayenne pepper or red pepper flakes. Store leftovers in an airtight container in the fridge for up to 2 days. Best eaten fresh.
