  • 1 tablespoon Olive oil
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Red curry paste
  • 1 lb Chicken breast cut into cubes
  • 1 cup Pineapple chunks fresh or canned
  • 1 cup Bell pepper sliced
  • 1 can Coconut milk 13.5 oz
  • 1 tablespoon Fish sauce
  • 1 teaspoon Brown sugar

Instructions

  • Turn on your pressure cooker to sauté mode and heat the olive oil.
  • Add diced onions and cook until translucent.
  • Stir in garlic and ginger and cook for another minute.
  • Add the red curry paste and stir to combine with the aromatics.
  • Add cubed chicken and brown for a couple of minutes.
  • Stir in pineapple, bell pepper, coconut milk, fish sauce, and brown sugar.
  • Lock the lid, set the pressure cooker to high pressure for 5 minutes.
  • After cooking, allow for natural release for 10 minutes, then quick release any remaining pressure.
  • Stir well and serve hot over jasmine rice or noodles.

Notes

Garnish with cilantro and a squeeze of lime for extra brightness.
