- 1 tablespoon Olive oil
- 1 Onion diced
- 2 cloves Garlic minced
- 1 tablespoon Ginger grated
- 2 tablespoon Red curry paste
- 1 lb Chicken breast cut into cubes
- 1 cup Pineapple chunks fresh or canned
- 1 cup Bell pepper sliced
- 1 can Coconut milk 13.5 oz
- 1 tablespoon Fish sauce
- 1 teaspoon Brown sugar

- Turn on your pressure cooker to sauté mode and heat the olive oil.
- Add diced onions and cook until translucent.
- Stir in garlic and ginger and cook for another minute.
- Add the red curry paste and stir to combine with the aromatics.
- Add cubed chicken and brown for a couple of minutes.
- Stir in pineapple, bell pepper, coconut milk, fish sauce, and brown sugar.
- Lock the lid, set the pressure cooker to high pressure for 5 minutes.
- After cooking, allow for natural release for 10 minutes, then quick release any remaining pressure.
- Stir well and serve hot over jasmine rice or noodles.
Notes
Garnish with cilantro and a squeeze of lime for extra brightness.
