  • 200 g Honey
  • 100 g Brown sugar
  • 2 tablespoon Butter unsalted
  • 1 teaspoon Cinnamon ground
  • 0.5 teaspoon Nutmeg grated
  • 0.5 teaspoon Cloves ground
  • 0.25 teaspoon Allspice
  • 2 Eggs large
  • 100 g Ground almonds
  • 100 g Candied orange peel finely chopped
  • 50 g Candied lemon peel finely chopped
  • 150 g Flour all-purpose
  • 1 teaspoon Baking powder
  • 12 Oblaten wafers 70mm diameter

  • Preheat oven to 175°C (350°F).
  • In a saucepan, combine honey, sugar, and butter. Heat gently until sugar dissolves. Let cool slightly.
  • Mix in eggs, spices, and ground almonds.
  • Fold in candied orange and lemon peel, flour, and baking powder until a thick batter forms.
  • Place 1 tablespoon of batter onto each Oblaten wafer, spreading slightly.
  • Set wafers on a lined baking sheet.
  • Bake for 12–15 minutes until golden and set.
  • Allow to cool completely before serving or packaging individually.

Notes

Store the cooled gingerbread in an airtight container for up to 2 weeks. These make great edible gifts around the holidays.
