A classic German holiday treat, these Nuremberg Gingerbread Wafers are rich, spiced, and perfect for sharing during festive seasons. Wrapped individually for convenience, these basic-quality delights are easy to make at home in just a few steps.

- 200 g Honey
- 100 g Brown sugar
- 2 tablespoon Butter unsalted
- 1 teaspoon Cinnamon ground
- 0.5 teaspoon Nutmeg grated
- 0.5 teaspoon Cloves ground
- 0.25 teaspoon Allspice
- 2 Eggs large
- 100 g Ground almonds
- 100 g Candied orange peel finely chopped
- 50 g Candied lemon peel finely chopped
- 150 g Flour all-purpose
- 1 teaspoon Baking powder
- 12 Oblaten wafers 70mm diameter

- Preheat oven to 175°C (350°F).
- In a saucepan, combine honey, sugar, and butter. Heat gently until sugar dissolves. Let cool slightly.
- Mix in eggs, spices, and ground almonds.
- Fold in candied orange and lemon peel, flour, and baking powder until a thick batter forms.
- Place 1 tablespoon of batter onto each Oblaten wafer, spreading slightly.
- Set wafers on a lined baking sheet.
- Bake for 12–15 minutes until golden and set.
- Allow to cool completely before serving or packaging individually.
Notes
Store the cooled gingerbread in an airtight container for up to 2 weeks. These make great edible gifts around the holidays.
