Turn on the sauté mode of your pressure cooker. Heat olive oil and sauté onion until translucent.
Add garlic and cook for another minute.
Add diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Stir to combine.
Pour in the vegetable broth and stir in the pasta.
Close the lid and cook at high pressure for 5 minutes. Let pressure release naturally for 5 minutes, then do quick release.
Open the lid and switch back to sauté mode.
Stir in heavy cream, Parmesan cheese, butter, and cream cheese if using. Cook for 2–3 minutes until sauce thickens.
Add peas and sun-dried tomatoes (if using), stir, and cook another minute.
Turn off heat and adjust seasoning with salt, pepper, and lemon juice if desired.
Transfer to serving bowls. Tear the Burrata cheese and place over pasta.
Garnish with fresh basil and pepper flakes. Serve immediately!
Notes
If you prefer a spicier pasta, increase the red pepper flakes. Add more cheese if you like it extra rich!
