  • 2 lbs chicken thighs bone-in, skin-on
  • cup soy sauce
  • ¼ cup white vinegar
  • 4 cloves garlic minced
  • 1 bay leaf
  • 1 teaspoon black peppercorns whole
  • 1 tablespoon brown sugar
  • 1 cup uncooked white rice rinsed
  • 1 ½ cups water

  • In the pressure cooker, combine soy sauce, vinegar, garlic, bay leaf, peppercorns, and brown sugar.
  • Add the chicken thighs to the pot and marinate for 15 minutes.
  • Turn on sauté mode and brown the chicken on both sides for about 5 minutes.
  • Pour in the uncooked rinsed rice and water over the chicken.
  • Close the lid, set to high pressure, and cook for 12 minutes.
  • Allow for natural pressure release for 10 minutes, then quick release any remaining pressure.
  • Open the lid and gently fluff the rice with a fork.
  • Serve hot, garnished with green onions or sliced chilies if desired.

Notes

For a richer flavor, marinate the chicken longer if time allows. Adjust soy sauce and vinegar to your taste preferences.
