
Chicken Adobo with Rice Pressure Cooker Recipe

- 2 lbs chicken thighs bone-in, skin-on
- ⅓ cup soy sauce
- ¼ cup white vinegar
- 4 cloves garlic minced
- 1 bay leaf
- 1 teaspoon black peppercorns whole
- 1 tablespoon brown sugar
- 1 cup uncooked white rice rinsed
- 1 ½ cups water

- In the pressure cooker, combine soy sauce, vinegar, garlic, bay leaf, peppercorns, and brown sugar.
- Add the chicken thighs to the pot and marinate for 15 minutes.
- Turn on sauté mode and brown the chicken on both sides for about 5 minutes.
- Pour in the uncooked rinsed rice and water over the chicken.
- Close the lid, set to high pressure, and cook for 12 minutes.
- Allow for natural pressure release for 10 minutes, then quick release any remaining pressure.
- Open the lid and gently fluff the rice with a fork.
- Serve hot, garnished with green onions or sliced chilies if desired.
Notes
For a richer flavor, marinate the chicken longer if time allows. Adjust soy sauce and vinegar to your taste preferences.
