
Pressure Cooker Hawaiian Wedding Cake

- 2 cups All-purpose flour
- 1 ½ cups Sugar
- ½ cup Butter melted
- 1 cup Crushed pineapple with juice
- 3 Eggs large
- 1 cup Shredded coconut unsweetened
- 1 teaspoon Vanilla extract

- Grease the pressure cooker insert with butter or non-stick spray.
- In a large bowl, combine flour and sugar.
- Stir in melted butter, crushed pineapple with juice, eggs, shredded coconut, and vanilla extract until well combined.
- Pour the batter into the prepared pressure cooker insert.
- Seal the pressure cooker lid and cook at high pressure for 30 minutes.
- Allow natural release of pressure for 10 minutes, then quick release remaining pressure.
- Carefully remove the cake from the pressure cooker and let cool.
- Frost with your favorite icing or enjoy as is.
- Slice and serve.
Notes
Use a trivet or rack inside the pressure cooker to prevent burning. You can substitute shredded coconut with coconut flakes for texture variations.
