  • 1 ½ cups Sugar
  • ½ cup Butter melted
  • 1 cup Crushed pineapple with juice
  • 3 Eggs large
  • 1 cup Shredded coconut unsweetened
  • 1 teaspoon Vanilla extract

  • Grease the pressure cooker insert with butter or non-stick spray.
  • In a large bowl, combine flour and sugar.
  • Stir in melted butter, crushed pineapple with juice, eggs, shredded coconut, and vanilla extract until well combined.
  • Pour the batter into the prepared pressure cooker insert.
  • Seal the pressure cooker lid and cook at high pressure for 30 minutes.
  • Allow natural release of pressure for 10 minutes, then quick release remaining pressure.
  • Carefully remove the cake from the pressure cooker and let cool.
  • Frost with your favorite icing or enjoy as is.
  • Slice and serve.

Notes

Use a trivet or rack inside the pressure cooker to prevent burning. You can substitute shredded coconut with coconut flakes for texture variations.
