Grease the pressure cooker insert with butter or non-stick spray.
In a large bowl, combine flour and sugar.
Stir in melted butter, crushed pineapple with juice, eggs, shredded coconut, and vanilla extract until well combined.
Pour the batter into the prepared pressure cooker insert.
Seal the pressure cooker lid and cook at high pressure for 30 minutes.
Allow natural release of pressure for 10 minutes, then quick release remaining pressure.
Carefully remove the cake from the pressure cooker and let cool.
Frost with your favorite icing or enjoy as is.
Slice and serve.
Notes
Use a trivet or rack inside the pressure cooker to prevent burning. You can substitute shredded coconut with coconut flakes for texture variations.
