- 1 pound Italian sausage spicy or mild based on preference
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 medium potatoes, thinly sliced
- 1 cup heavy cream
- 2 cups kale, chopped
- 1 teaspoon red pepper flakes optional
- Salt and pepper to taste
- 2 tablespoons olive oil
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Add the minced garlic and Italian sausage to the pot. Break apart the sausage with a wooden spoon and cook until browned, about 5-7 minutes.
Stir in the thinly sliced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
Once the potatoes are cooked, add the heavy cream and chopped kale. Stir well to combine and cook for an additional 5 minutes, or until the kale is wilted.
Season the soup with red pepper flakes, salt, and pepper to taste.
Serve hot in bowls, and enjoy!
This soup can be easily customized. Add other vegetables like carrots or celery for extra flavor and nutrition.
If you prefer a thicker soup, you can mash some of the potatoes against the side of the pot before adding the cream.
