  • 4 cups shredded or spiralized zucchini from about 2 large zucchinis
  • ½ cup shredded mozzarella cheese about 56 grams
  • cup gluten free all purpose flour about 47 grams
  • 1 clove garlic minced or pressed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 egg beaten
  • 1.5 teaspoon salt split between crust and topping
  • 2 tablespoon pizza sauce
  • 3 stalks asparagus sliced and cut into 2-inch pieces
  • 6 cherry tomatoes sliced
  • 1 tablespoon olive oil for drizzling
  • pinch salt and pepper
  • 2 eggs for topping
  • 2 tablespoon grated parmesan cheese for cheesy finish
  • to taste fresh basil or herbs for garnish

  • Preheat your oven to 400°F (about 200°C) to prepare for baking the crust.
  • Place shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible to avoid soggy crust.
  • In a mixing bowl, combine zucchini, shredded mozzarella, gluten free flour, garlic, oregano, basil, beaten egg, and 1 teaspoon salt. Mix well until doughy.
  • Spread the mixture evenly onto a baking sheet lined with parchment paper, about a quarter inch thick for even cooking.
  • Bake the crust for 20-25 minutes until golden brown and firm to touch without wobbling.
  • Remove crust from oven, spread pizza sauce gently over the top without soaking the crust.
  • Arrange asparagus pieces on top, sprinkle remaining salt, then bake for an additional 10 minutes to roast veggies and settle sauce.
  • Remove pizza, crack 2 eggs over the top and add grated parmesan cheese. Optionally broil for 1-2 minutes to cook eggs or serve eggs on the side.
  • Slice and serve your fresh zucchini crust breakfast pizza.

Notes

Use pre-shredded zucchini as a shortcut. Swap oven baking with low setting pressure cooking if desired. Customize with additional toppings like cooked bacon or leftover vegetables for variety.
