  • 15 oz whole milk ricotta cheese
  • ½ cup shredded mozzarella cheese plus 1 ½ cups more for topping
  • ¼ cup grated parmesan cheese plus extra for topping
  • 1 large egg
  • ¼ teaspoon freshly cracked black pepper
  • 1 rotisserie chicken shredded (about 3 cups cooked chicken)
  • 9 lasagna noodles
  • 4 tablespoon butter
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • 3 cups baby spinach chopped

  • Preheat oven to 375°F and prepare the ricotta mixture by mixing ricotta, ½ cup mozzarella, ¼ cup parmesan, egg, and black pepper in a bowl. Set aside.
  • Shred rotisserie chicken into bite-sized pieces.
  • Boil lasagna noodles in salted water until tender, then drain and lay flat.
  • In a skillet, melt butter over medium heat. Sauté diced onion for 5 minutes until translucent. Add shredded chicken and stir, then remove from heat.
  • Stir in flour and cook until slightly browned. Slowly add chicken broth while whisking until smooth.
  • Add Italian seasoning, salt, pepper, garlic powder, heavy cream, ¼ cup parmesan, and chopped spinach. Stir and cook until well combined.
  • In a 9×13-inch dish, spread 1 cup sauce, lay 3 noodles, ⅓ ricotta mix, ⅓ chicken, and repeat layers twice more. Top with remaining sauce and 1½ cups mozzarella cheese.
  • Cover with foil and bake 25 minutes. Remove foil and bake another 10 minutes until golden and bubbly. Let rest for 10 minutes before slicing.

Notes

Leftovers keep great and are easy to reheat. Use quality cheese and fresh spinach for the best flavor. Rotisserie chicken saves time.
