This creamy White Chicken Lasagna combines tender shredded chicken, spinach, and rich cheeses layered between noodles and a homemade white sauce, cooked beautifully in your pressure cooker for easy comfort food perfection.
Preheat oven to 375°F and prepare the ricotta mixture by mixing ricotta, ½ cup mozzarella, ¼ cup parmesan, egg, and black pepper in a bowl. Set aside.
Shred rotisserie chicken into bite-sized pieces.
Boil lasagna noodles in salted water until tender, then drain and lay flat.
In a skillet, melt butter over medium heat. Sauté diced onion for 5 minutes until translucent. Add shredded chicken and stir, then remove from heat.
Stir in flour and cook until slightly browned. Slowly add chicken broth while whisking until smooth.
Add Italian seasoning, salt, pepper, garlic powder, heavy cream, ¼ cup parmesan, and chopped spinach. Stir and cook until well combined.
