Preheat oven to 425°F. Toss sweet potato cubes with olive oil, oregano, smoked paprika, and taco seasoning. Spread on a baking sheet.
Roast sweet potatoes for 25 minutes, stirring halfway through.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook beef mince until browned and crumbled.
Add garlic powder, onion powder, taco seasoning to beef. Cook for another 5 minutes.
Transfer beef to pressure cooker, add tomato paste and beef stock. Seal the lid and pressure cook for 10 minutes.
Let pressure cooker natural release fully. Assemble bowls with roasted sweet potatoes, beef, cottage cheese, pico de gallo, cabbage slaw, avocado, hot honey, coriander, and lime.
Notes
Serve with fresh toppings to add a burst of flavor with every bite. Adjust topping quantities as desired.
