Line your loaf tin with baking paper and get it ready to hold the batter snug.
In a large bowl, mix your dried mixed fruit and fruit juice. Give it a good stir and let it soak at least an hour or overnight in the fridge so fruit gets all juicy.
Add self-raising flour into that juicy mix and stir until everything’s combined nice and smooth.
Pour the batter into your lined loaf tin and smooth the top with a spatula, making sure it spreads evenly.
Place a trivet or rack inside the pressure cooker and add about 1 cup of water — don’t let the water touch the cake tin.
Put the loaf tin on the trivet, seal the lid tight, and cook on high pressure for 40 minutes. After cooking, do a quick release. Let cake cool a bit before serving.
Notes
Let the cake cool before slicing. Store wrapped at room temperature or freeze individual slices. Optional: add cinnamon or nuts for variation.
