A quick and simple fruit cake made in the pressure cooker with just three ingredients – rich, moist, and full of fruity flavor.

  • 1 Mixing bowl Large enough for batter
  • 1 Loaf tin Lined with baking paper
  • 1 Pressure cooker Sealing ring in place
  • 1 Trivet To elevate loaf tin

  • 2 cups Dried mixed fruit Sweet and textured
  • 1 ½ cups Self-raising flour Ensure it's fresh
  • 1 ½ cups Fruit juice No added sugar; apple, orange or tropical

  • Line your loaf tin with baking paper and get it ready to hold the batter snug.
  • In a large bowl, mix your dried mixed fruit and fruit juice. Give it a good stir and let it soak at least an hour or overnight in the fridge so fruit gets all juicy.
  • Add self-raising flour into that juicy mix and stir until everything’s combined nice and smooth.
  • Pour the batter into your lined loaf tin and smooth the top with a spatula, making sure it spreads evenly.
  • Place a trivet or rack inside the pressure cooker and add about 1 cup of water — don’t let the water touch the cake tin.
  • Put the loaf tin on the trivet, seal the lid tight, and cook on high pressure for 40 minutes. After cooking, do a quick release. Let cake cool a bit before serving.

Notes

Let the cake cool before slicing. Store wrapped at room temperature or freeze individual slices. Optional: add cinnamon or nuts for variation.
