  • 3 Tbsp. extra-virgin olive oil divided
  • 4 boneless, skinless chicken breasts
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 2 garlic cloves finely chopped
  • 1 Tbsp. fresh thyme leaves
  • 1 tsp. crushed red pepper flakes
  • ¾ cup low-sodium chicken broth
  • ½ cup sun-dried tomatoes finely chopped
  • ½ cup heavy cream
  • ¼ cup Parmesan cheese finely grated
  • Torn fresh basil for serving

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Season chicken breasts well on both sides with kosher salt and freshly ground black pepper.
  • Lay chicken carefully in the heated skillet. Cook for about 5-7 minutes per side until golden brown and cooked through.
  • Transfer the cooked chicken to a plate and set aside.
  • Turn heat down to medium and add the remaining 1 tablespoon olive oil. Add garlic, thyme, and red pepper flakes. Stir and cook for 1 minute until fragrant.
  • Slowly add chicken broth and chopped sun-dried tomatoes. Simmer for 5 minutes until sauce reduces slightly.
  • Stir in heavy cream and Parmesan cheese until combined.
  • Return chicken to skillet. Spoon sauce over each breast and let simmer for 2 minutes.
  • Garnish with torn fresh basil before serving.

Notes

Be sure to use natural release on the pressure cooker for tender chicken and rich flavor. This dish keeps well for 3 days in the fridge or can be frozen in portions for a simple reheat dinner later.
