In a mixing bowl, combine honey, minced garlic, soy sauce, and olive oil. Add salt and pepper to taste. Stir until well mixed.
Place chicken thighs in a baking dish or pressure cooker pot. Pour the honey garlic mixture over the chicken, coating thoroughly.
Seal the pressure cooker with the lid, ensuring the sealing ring is in place. Set to cook on high pressure for 10 minutes.
Perform a quick release when the timer is done. Allow the float valve to drop before opening.
Once the chicken is tender, sprinkle chopped parsley over top and serve immediately.
Notes
For extra crispiness, broil the chicken in the oven for a few minutes after pressure cooking.
