  • 1 lb spaghetti
  • 2 tablespoon olive oil
  • 1 small onion finely chopped
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes
  • 1 can (28 oz) whole peeled tomatoes
  • ½ teaspoon sugar
  • salt to taste
  • freshly ground black pepper to taste
  • ½ cup unsalted butter
  • ¼ cup grated Parmesan cheese
  • fresh basil leaves for garnish

  • Boil spaghetti until al dente. Reserve 1 cup of pasta water before draining.
  • Heat olive oil in a saucepan over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
  • Pour in the whole peeled tomatoes with juices. Crush gently with a spoon to form a sauce. Stir in sugar, salt, and pepper.
  • Let the sauce simmer for 20 minutes, stirring occasionally.
  • Stir in butter until melted. Add reserved pasta water gradually until desired sauce consistency is reached.
  • Add cooked spaghetti into the sauce and toss to coat. Sprinkle Parmesan and garnish with fresh basil. Serve hot.

Notes

To elevate this dish, prep your onion and garlic the night before and store them refrigerated. Leftovers reheat well with a splash of broth or pasta water. For a meaty version, add browned sausage or beef with the onions.
