Start heating 1 tablespoon sesame oil and 1 tablespoon olive oil in your big pot over medium heat. You’re gonna get a nice hot surface to brown that chicken.
Season your chicken cubes with salt and pepper. Toss them into the pot and cook till browned and cooked through, ’bout 5-7 minutes. Don’t skip browning — it adds layers of flavor.
Add minced garlic and grated ginger to the pot. Let them cook ’bout 1-2 minutes till you smell that fragrance hitting your nose. Good stuff!
Stir in your broccoli, carrots, and bell pepper strips. Cook them another 5 minutes until veggies get tender but still got a bit of snap.
While that’s going on, cook your rice noodles separately according to package instructions. Drain and set aside to keep 'em ready.
Pour in all your teriyaki sauce ingredients — soy sauce, coconut sugar, rice vinegar — plus the rest of your oils. Stir it all real good so nothing sticks.
Add your cooked noodles right back into the pot, mix to coat everything evenly. Cook for another 2-3 minutes to let the sauce soak in and flavors marry. Serve hot, y’all!
