  • ½ lb chopped bacon about 5-6 slices depending on thickness
  • 10 eggs nice and fluffy
  • ¼ cup milk to blend the eggs just right
  • 1 teaspoon Creole seasoning if you want that little spicy kick (or salt-free version)
  • ½ teaspoon salt for balance
  • ½ teaspoon black pepper fresh cracked always works best
  • 2 cups shredded cheddar cheese for that melty yum
  • 16-20 oz frozen tater tots the crispy base you love
  • 1 greased 9x13 inch baking dish to hold all this goodness

  • Preheat your oven to 375°F. You want it nice and hot when your casserole goes in.
  • Grab a skillet and toss in that chopped bacon. Medium heat works best so it gets crispy but doesn’t burn. Drain it on paper towels when done to ditch the extra grease.
  • In a big bowl, whisk together those 10 eggs with ¼ cup milk. Add in your Creole seasoning, salt, and black pepper. Get it all mixed real good – you want even flavor in every bite.
  • Fold the cooked bacon and the shredded cheddar cheese into your egg mix. The cheesy bacon goodness is gonna taste so right.
  • Spray or grease your baking dish real good. Now spread the frozen tater tots evenly on the bottom.
  • Pour your egg, cheese, and bacon mixture right over those tater tots. Make sure you cover it all nice and even so every tot gets some love.
  • Pop it in the oven and let bake for about 30 minutes. You’re looking for the eggs to set and the top to get that little golden glow.
  • When it’s done, give it a few minutes to cool before slicing. You don’t wanna burn your tongue, but you gotta taste it soon!
