Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 20 minutes, or until the sweet potatoes are tender, stirring occasionally.
Season with salt and pepper according to your taste.
Once cooked, remove from heat and let it rest for a few minutes. Serve warm, garnished with fresh cilantro if desired.
