Preheat your oven to 325ºF so it’s ready as soon as you need to bake.
Cut the chicken into bite-sized pieces. Season with salt and pepper.
Set up your dredging station — cornstarch in one bowl, beaten eggs in another.
Heat vegetable oil over medium-high in your skillet. Dredge chicken in cornstarch, then egg, and brown on all sides, working in batches.
Transfer browned chicken to a baking dish.
Mix sugar, ketchup, apple cider vinegar, soy sauce, and garlic powder in a bowl for your sauce. Pour over chicken.
Bake uncovered for one hour at 325ºF. Stir every 15 minutes to coat the chicken evenly.
Once done, let rest or serve immediately over fluffy rice.
Notes
Leftovers store well and taste great reheated. Great for meal prep—just freeze extra portions!
