Preheat your oven to 425°F (220°C) for finishing your loaf later. The pressure cooker part comes before baking, don’t skip the oven.
Grab a large bowl and whisk together your flour, kosher salt, sugar, and baking soda till they’re well mixed. You notice how dry and powdery it looks but soon that’s gonna change.
Make a well in center and crack in the egg, then pour the buttermilk right in. Stir it all up quick like until you get sticky dough forming, toss in your currants if you decided to use them.
Turn that dough onto a floured surface and knead gently for about a minute. Don’t go crazy here, just enough to bring it together.
Shape into a round loaf. Place it on parchment lined baking sheet, then cut a deep cross into the top with a sharp knife.
Brush the melted butter on top and get it ready to hit the oven. Once your pressure cooker’s done with its part, you bake the loaf for 25-30 minutes till it’s golden and sounds hollow when you tap the bottom. Then cool it so it slices nice without crumbling.
