  • 12 ounces penne pasta hold sauce well
  • 8 ounces fresh salmon fillets usually about two fillets
  • Salt and pepper for seasoning
  • 2 tablespoons olive oil split between skillet and dressing mix
  • 1 small red onion thinly sliced
  • 1 pint cherry tomatoes
  • ½ cup pesto store-bought or homemade
  • 1 lemon juiced
  • cup grated parmesan or Romano cheese for salty finish
  • Fresh basil shreds for garnish

  • Cook the penne pasta according to package instructions in the pressure cooker with enough water to cover and some salt.
  • Once cooked al dente (about 4 minutes), do a quick release, drain and set aside in a large bowl.
  • Season salmon fillets with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat, and cook the salmon for 4-5 minutes on each side until fully cooked.
  • Flake salmon into large chunks and add to pasta with sliced red onion and cherry tomatoes.
  • Add pesto, fresh lemon juice, and remaining olive oil to the bowl, and gently toss all ingredients.
  • Sprinkle with parmesan or Romano cheese and garnish with fresh basil shreds before serving.

This dish comes together fast and is perfect for warm nights. Serve immediately or chill for enhanced flavors.
