  • 4 chicken thighs boneless and skinless
  • 1 tablespoon lime juice
  • 1 tablespoon avocado oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • 0.5 teaspoon garlic powder or 2 minced garlic cloves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup sweet corn kernels grilled or sautéed
  • 0.25 cup red onion thinly sliced
  • 1 cup sour cream save half to drizzle
  • 2 tablespoon mayonnaise
  • 0.5 cup cotija cheese crumbled, plus extra for garnish
  • 1 teaspoon chili powder for sauce
  • salt and pepper to taste
  • 1 lime cut into wedges
  • 3 cups cooked rice
  • fresh cilantro for garnish

  • Combine lime juice, avocado oil, chili powder, cumin powder, garlic powder, salt, and pepper in a bowl. Coat chicken thighs and marinate for 15-30 minutes in fridge.
  • Heat skillet on medium-high. Sear chicken for 8-10 minutes per side until golden and cooked through. Let rest, then slice.
  • Mix grilled or sautéed corn, red onion, sour cream, mayonnaise, cotija cheese, chili powder, salt, pepper and lime juice for corn topping.
  • Reheat rice with splash of water until warm and fluffy.
  • Assemble bowls: rice, sliced chicken, corn topping, extra cotija, cilantro, and lime wedges.
  • Optional: drizzle extra sour cream or finish with Tajín for more flavor.
  • Serve warm and enjoy all the flavors mingling together.

Notes

Char the corn for smoky flavor. Use fresh lime juice for brightness. Reheat rice with water to keep fluffy. For extra heat, add jalapeños or cayenne. Top with avocado, pico de gallo, or radish for more punch.
