  • 8 oz cream cheese softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • 1 cup fresh strawberries finely chopped
  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter melted
  • ¼ cup chopped toasted pecans optional
  • Additional chopped strawberries for garnish, optional

  • Beat the cream cheese and sugar together until smooth.
  • Add vanilla and heavy cream, beat until fluffy.
  • Fold in chopped strawberries gently.
  • Mix graham cracker crumbs with melted butter and optional pecans.
  • Press crumb mixture into taco molds or muffin tins.
  • Bake at 350°F for 8–10 minutes. Let cool.
  • Fill cooled shells with strawberry cheesecake mixture.
  • Top with extra chopped strawberries if desired.
  • Chill assembled tacos in fridge for at least 20 minutes before serving.

Notes

Use pre-made graham taco shells to save time. Filling can be frozen ahead. Shells and filling store best separately for optimal crunch.
