Beat the cream cheese and sugar together until smooth.
Add vanilla and heavy cream, beat until fluffy.
Fold in chopped strawberries gently.
Mix graham cracker crumbs with melted butter and optional pecans.
Press crumb mixture into taco molds or muffin tins.
Bake at 350°F for 8–10 minutes. Let cool.
Fill cooled shells with strawberry cheesecake mixture.
Top with extra chopped strawberries if desired.
Chill assembled tacos in fridge for at least 20 minutes before serving.
Notes
Use pre-made graham taco shells to save time. Filling can be frozen ahead. Shells and filling store best separately for optimal crunch.
