Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.
In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, minced ginger, salt, pepper, and soy sauce. Mix until well incorporated.
Form the mixture into small meatballs, about 1-inch in diameter. Place the meatballs on the prepared baking tray.
Bake the meatballs in the preheated oven for 15 minutes, or until cooked through and browned.
While the meatballs are baking, prepare the sticky sauce. In a small saucepan, combine soy sauce, brown sugar, honey, and sesame oil. Heat over medium heat until the sugar dissolves.
In a separate bowl, mix cornstarch with water until smooth. Add this mixture to the sauce and stir continuously until it thickens, about 2-3 minutes. Remove from heat.
In the last 5 minutes of meatballs baking, steam or sauté the broccoli in olive oil, seasoning with salt and pepper until bright green and tender.
Once the meatballs are done, toss them in the sticky sauce until well coated.
Serve the meatballs over the broccoli, drizzling any extra sauce on top.
