Heat sunflower oil in the pressure cooker over medium-high heat. Add beef strips and stir-fry until browned, about 3-5 minutes.
Remove beef from pot and set aside. Add broccoli and mange tout to the same pot, cooking until tender-crisp, about 3-4 minutes.
Add garlic and ginger to the pot and stir for 1 minute until fragrant.
Pour in oyster sauce, dark soy sauce, and honey. Mix everything thoroughly to coat.
Return beef to the pot with cooked noodles. Toss gently to coat noodles with sauce. Cook 2-3 minutes until heated through.
Turn off the heat and allow pressure to release naturally for optimal tenderness.
Perform a quick release, ensuring careful handling of steam.
Sprinkle sliced spring onions over the dish and serve hot.
