Place potatoes into a large pot and cover with cold water. Bring to a boil, cook for 10-15 minutes until fork tender. Drain and let cool to room temperature.
In a large bowl, mix mayonnaise, sour cream, dijon mustard, and apple cider vinegar until combined and creamy.
Add cooled cooked potatoes, red onion, bacon, cheddar cheese, parsley, and dill pickles to the bowl. Stir gently until combined. Season with salt and pepper.
Cover bowl with plastic wrap and refrigerate for at least 1 hour before serving to let flavors blend. Garnish with chives or green onions before serving.
