  • 1 clove Garlic or ½ shallot, minced
  • cup Extra-virgin olive oil
  • 3 Tbsp. Red wine vinegar
  • 2 tsp. Dijon mustard
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 5 oz. Fresh spinach washed and ready to go
  • 1 Apple Honeycrisp if you can, thinly sliced
  • ¼ Red onion thinly sliced
  • cup Crumbled feta
  • ¼ cup Sliced almonds toasted

  • Start by mincing your garlic or shallot. It’s small but powerful, so make sure you get it nice and fine.
  • Grab a small bowl and whisk together that minced garlic with your olive oil, red wine vinegar, and Dijon mustard. Get it all mixed until it’s smooth and kinda glossy.
  • Add kosher salt and freshly ground black pepper. Taste it quick so you get the balance right. This dressing gonna set your salad apart.
  • In a bigger bowl, toss your fresh spinach, sliced apple, and red onion together. Make sure they’re cleaned and sliced thin so every bite is balanced.
  • Sprinkle on your crumbled feta and sliced almonds. Drizzle the dressing over your salad and toss everything gently but well. Serve immediately while it’s fresh and crisp.

Notes

To store, keep the dressing separate and store salad in an airtight container in the fridge for up to two days. Add lemon juice to sliced apples to prevent browning.
