  • 10 oz Baby spinach washed and ready
  • 1 can Mandarin oranges about 15 oz, drained; or 4 fresh mandarins peeled and sectioned
  • ¼ cup Red onion thinly sliced
  • ½ cup Goat cheese crumbles
  • ½ cup Sliced almonds
  • ½ cup Dried cranberries
  • ½ cup Olive oil for the dressing base
  • ¼ cup Balsamic vinegar
  • 1-2 tablespoons Honey to taste
  • 2 teaspoons Dijon mustard for gentle heat
  • Sea salt and pepper to taste

  • Combine baby spinach, mandarin oranges, red onion, goat cheese, almonds, and cranberries in a large bowl. Toss lightly.
  • In a smaller bowl, whisk together olive oil, balsamic vinegar, honey, and Dijon mustard until smooth.
  • Pour the honey balsamic dressing over the salad mix. Toss gently to coat.
  • Optionally refrigerate for up to an hour to blend flavors, or serve immediately.
