Combine baby spinach, mandarin oranges, red onion, goat cheese, almonds, and cranberries in a large bowl. Toss lightly.
In a smaller bowl, whisk together olive oil, balsamic vinegar, honey, and Dijon mustard until smooth.
Pour the honey balsamic dressing over the salad mix. Toss gently to coat.
Optionally refrigerate for up to an hour to blend flavors, or serve immediately.
