  • First, melt 2 tablespoons butter in your pressure cooker pot over medium heat. You want it to bubble but not burn.
  • Add the ground pork sausage and andouille sausage; cook ‘em until they brown nicely, 'bout 5 minutes. Stir ‘em so they don’t stick or clump.
  • Toss in the diced onion, celery, and carrot. Cook until those veggies soften up just right—about another 5 minutes.
  • Mix in minced garlic, Cajun seasoning, and cayenne pepper. Let it cook for 1-2 minutes, stirring constantly so the spices wake up.
  • Add your peeled and cubed potatoes right into the pot. Pour in 4 cups of chicken broth so everything’s just covered—check your broth depth.
  • Seal up the lid tight, make sure the sealing ring is in place. Turn the valve to sealing and bring it to high pressure. You’ll hear that valve hiss build up, then keep it there for 10 minutes.
  • Once time’s up, you gotta do a natural release for about 10 minutes before popping the valve to release any leftover steam. Slow release makes the potatoes perfect, not mushy.
  • Open the lid carefully, stir in ½ cup heavy cream and 1 cup shredded cheddar cheese. Season with salt and pepper, garnish with chopped parsley. Ready to serve hot and cozy!
