Preheat your oven to 400°F (200°C) and grease a 12-cup muffin tin with cooking spray or butter.

In another bowl, mix the buttermilk, melted butter, eggs, and honey until smooth.
Pour the wet ingredients into the dry ingredients, stirring just until combined. Do not overmix; a few lumps are fine.
Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Bake in the preheated oven for about 15-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
While the poppers are baking, prepare the honey butter by mixing softened butter, honey, and cinnamon in a small bowl until smooth and creamy.
Once the poppers are baked, remove them from the oven and let them cool for a few minutes before transferring them to a wire rack.
Serve warm with the honey butter on the side.
