Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.
In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk until well combined.
In another bowl, mix the buttermilk, eggs, melted butter, and honey until fully incorporated.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
Spoon the cornbread batter into the prepared muffin tin, filling each cup about three-quarters full.
Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
While the poppers are baking, prepare the honey butter by mixing the softened unsalted butter with honey until smooth and creamy.
Once the cornbread poppers are done, remove them from the oven and let them cool slightly. Drizzle with additional honey if desired.
Serve warm with honey butter spread on top.
