Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter melted
  • ¼ cup honey
  • to taste additional honey for drizzling
  • ½ cup unsalted butter for honey butter

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.
  • In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk until well combined.
  • In another bowl, mix the buttermilk, eggs, melted butter, and honey until fully incorporated.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  • Spoon the cornbread batter into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  • While the poppers are baking, prepare the honey butter by mixing the softened unsalted butter with honey until smooth and creamy.
  • Once the cornbread poppers are done, remove them from the oven and let them cool slightly. Drizzle with additional honey if desired.
  • Serve warm with honey butter spread on top.

Notes

For a more decadent flavor, you can add a pinch of cinnamon to the honey butter.
These poppers can be made ahead of time and reheated for best results.
