  • 500 g Chicken Breast Diced into small pieces
  • 10 g Ginger
  • 5 Green chillies Slit in between
  • 2 Tomatoes Large sized
  • 2 Onions Large sized
  • 10-12 Whole Black Pepper Adjust as per your taste
  • 2 Cinnamon sticks Small sized
  • 1 Star Anise
  • 2 Bay leaves
  • 14-16 Curry leaves Fresh
  • 8 cloves Garlic Peeled and uncut
  • 5 g Fennel Seeds
  • 2 teaspoon Salt Adjust to taste
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chilli Powder Adjust to taste
  • 1.5 teaspoon Garam Masala Powder

  • Heat oil in a pan, sauté cinnamon sticks, star anise, peppercorns, bay leaves for 1 min.
  • Add curry leaves, chopped ginger, and chillies. Sauté for 2–3 minutes till ginger turns golden.
  • Add sliced onions and cook until golden brown.
  • Add chopped tomatoes and cook till soft and oil separates.
  • Add chicken and stir to coat with the spice base.
  • Add salt and cook on medium heat for 20–22 minutes, stirring occasionally.
  • Lower heat, continue cooking uncovered for 10 mins until chicken is dry and coated.
  • Serve hot with Indian bread or rice. Sprinkle lemon juice for extra zest.

Notes

Exercise care to avoid overcooking. Add lemon juice before serving if preferred. Cook on medium flame. Try with paneer for veg option. Add 50ml water if you prefer slight gravy.
