  • 6 cup Butter to melt and brown your chicken in
  • 1 Whole chicken cut into pieces
  • 3 teaspoons Salt divided for seasoning and finishing
  • 4 teaspoon Ground black pepper split for seasoning the chicken and the gravy
  • 3 cup All-purpose flour to dredge the chicken and thicken the gravy
  • 3 cups Chopped yellow onions
  • 2 cups Chopped carrots
  • 1 cup Chopped celery
  • 3 cloves Garlic chopped
  • 3 cups Chicken broth
  • 4 teaspoon Cayenne pepper

  • Melt butter in a large Dutch oven on medium heat.
  • Season chicken with 2 teaspoons salt and 2 teaspoons black pepper. Coat well.
  • Place 3 cups of flour in a shallow dish and dredge chicken pieces in it. Shake off excess.
  • Brown chicken in melted butter, 4–5 minutes each side. Remove and set aside.
  • Add onions, carrots, and celery. Sauté 8 minutes until soft. Add garlic and cook 1 minute more.
  • Sprinkle 3 tablespoons flour over vegetables. Cook 2 minutes, stirring to eliminate raw taste.
  • Slowly stir in chicken broth to avoid lumps. Bring to a simmer.
  • Return chicken to pot. Add remaining 1 teaspoon salt and 2 teaspoons black pepper.
  • Seal pressure cooker lid, making sure the float valve is up. Pressure cook 25–30 minutes.
  • Quick release pressure. Check for tenderness; cook a few more minutes if needed.
  • Serve hot over rice or mashed potatoes. Spoon vegetables and thick gravy on top.
