Main ingredients

  • 1 ½ cups lukewarm water about 100°F/38°C
  • 2 ¼ teaspoons instant or active dry yeast 1 packet
  • 1 Tablespoon brown sugar or granulated sugar
  • 1 teaspoon salt
  • 1 Tablespoon unsalted butter melted and slightly cooled
  • 3 ¾ to 4 cups all-purpose flour spooned & leveled, plus extra for work surface
  • Coarse salt or coarse sea salt for topping
  • ½ cup baking soda
  • 9 cups water for boiling
  • Spicy cheese sauce or your favorite mustard for dipping

  • Mix warm water, yeast, and sugar in a big bowl and let sit for about 5 minutes until frothy.
  • Add salt and melted butter to the mix and stir well.
  • Gradually add flour a cup at a time, stirring until dough pulls together soft and sticky.
  • Knead the dough on a floured board for 5-7 minutes until smooth and springy.
  • Grease a bowl, place the dough in it, cover, and let rise in a warm place for about an hour.
  • Preheat oven to 450°F and line a baking sheet with parchment paper.
  • Boil 9 cups of water with baking soda in a large pot.
  • Divide dough into ropes, cut into bite-sized pieces.
  • Boil pieces for 30 seconds in the soda bath, then remove.
  • Sprinkle each piece with coarse salt before baking.
  • Bake for 12-15 minutes until golden brown.

Notes

Best enjoyed fresh, but can be stored or frozen for later.
