Coarse salt or coarse sea salt

Spicy cheese sauce or your favorite mustard

Mix warm water, yeast, and sugar in a big bowl and let sit for about 5 minutes until frothy.
Add salt and melted butter to the mix and stir well.
Gradually add flour a cup at a time, stirring until dough pulls together soft and sticky.
Knead the dough on a floured board for 5-7 minutes until smooth and springy.
Grease a bowl, place the dough in it, cover, and let rise in a warm place for about an hour.
Preheat oven to 450°F and line a baking sheet with parchment paper.
Boil 9 cups of water with baking soda in a large pot.
Divide dough into ropes, cut into bite-sized pieces.
Boil pieces for 30 seconds in the soda bath, then remove.
Sprinkle each piece with coarse salt before baking.
Bake for 12-15 minutes until golden brown.
Notes
Best enjoyed fresh, but can be stored or frozen for later.
