high heat oil
like canola, sunflower, or avocado for coating the carrots

Preheat your oven to 400°F (200°C).
Peel and slice the carrots into about 1-inch thick rounds.
In a big bowl, toss the carrot slices with oil, salt, and black pepper.
Lay the carrots in a single layer on your baking sheet.
Roast the carrots in the oven for 20 minutes.
Once out of the oven, gently smash each carrot round with a fork.
Sprinkle the smashed carrots with fresh parmesan and thyme leaves.
Put the roasting pan back in the oven for another 10 minutes.
