Heat a skillet over medium heat and brown the ground beef until no pink remains. Drain excess fat.
Transfer the cooked beef to a slow cooker.
Add slaw mix, shredded carrots, and minced garlic to the slow cooker.
Pour in tamari, chicken stock, and brown sugar. Gently stir to combine.
Cover and cook on low for 4 hours or high for 2 hours, until vegetables are tender and bubbling.
Add broken ramen noodles and stir to submerge. Cook on high for 10-15 minutes, until tender.
Notes
Top with sliced green onions, sesame seeds, sriracha, or chili crisp for extra flavor and texture.
