  • 1 pound lean ground beef
  • 9 ounces slaw mix
  • 2 cups shredded carrots
  • 3 cloves garlic minced
  • cup low sodium tamari or soy sauce
  • 2 cups chicken stock
  • 1 teaspoon brown sugar
  • 2 packages ramen noodles flavoring packets discarded or saved for another use

  • Heat a skillet over medium heat and brown the ground beef until no pink remains. Drain excess fat.
  • Transfer the cooked beef to a slow cooker.
  • Add slaw mix, shredded carrots, and minced garlic to the slow cooker.
  • Pour in tamari, chicken stock, and brown sugar. Gently stir to combine.
  • Cover and cook on low for 4 hours or high for 2 hours, until vegetables are tender and bubbling.
  • Add broken ramen noodles and stir to submerge. Cook on high for 10-15 minutes, until tender.

Notes

Top with sliced green onions, sesame seeds, sriracha, or chili crisp for extra flavor and texture.
