Cook the bacon in a skillet till crispy. Drain on paper towels. Once cool, chop it up for garnish later.
Mix the seasoned flour spices together in a shallow dish. Use it to coat each chicken piece really well.
Heat a bit of oil in the same skillet from bacon and sear chicken on all sides till golden but not cooked through.
Transfer that chicken to the slow cooker or pressure cooker insert. Pour the honey pepper sauce over it.
Cook LOW 4-5 hours or HIGH 2-3 hours in slow cooker; pressure cooker needs about 15 min pressure build then natural release.
While chicken cooks, boil pasta till just al dente. Drain and set aside.
Make the cheese sauce by melting butter, adding garlic & diced Anaheim pepper, stir in flour, then slowly whisk cream. Melt in all cheeses till smooth. Toss pasta in sauce to coat.
