Instructions
Place bite-sized pieces of chicken into the slow cooker.
Add green beans, orange juice, mandarin orange juice (reserve sliced mandarins), chicken broth, soy sauce, brown sugar, garlic, sesame oil, and ground ginger. Stir to combine.
Cover the slow cooker and cook on low for 4-5 hours (or until chicken reaches 165ºF).
30 minutes before serving, stir together cornstarch and 3 tablespoons of cold water, then mix into the slow cooker.
Add the reserved mandarin orange slices and stir gently to combine.
Leave uncovered for final 30 minutes to thicken sauce.
Serve warm over rice or noodles.
Notes
You can skip cornstarch if preferred. For a richer look, garnish with green onion or sesame seeds. Leftovers can be refrigerated up to 4 days.
