  • 1.5-2 lbs Chicken breast or thighs cut into bite sized pieces
  • 1-1.5 cups Fresh green beans cut into 1-2 inch pieces
  • 1 cup Chicken broth
  • 1 cup Orange juice
  • 3 tablespoon Soy sauce
  • 2 tablespoon Brown sugar or sugar-free substitute
  • 1 tablespoon Minced garlic
  • 1 tablespoon Toasted sesame oil
  • 1 teaspoon Ground ginger
  • 11 oz can Mandarin oranges with juice
  • 3 tablespoon Cornstarch

Instructions

  • Place bite-sized pieces of chicken into the slow cooker.
  • Add green beans, orange juice, mandarin orange juice (reserve sliced mandarins), chicken broth, soy sauce, brown sugar, garlic, sesame oil, and ground ginger. Stir to combine.
  • Cover the slow cooker and cook on low for 4-5 hours (or until chicken reaches 165ºF).
  • 30 minutes before serving, stir together cornstarch and 3 tablespoons of cold water, then mix into the slow cooker.
  • Add the reserved mandarin orange slices and stir gently to combine.
  • Leave uncovered for final 30 minutes to thicken sauce.
  • Serve warm over rice or noodles.

Notes

You can skip cornstarch if preferred. For a richer look, garnish with green onion or sesame seeds. Leftovers can be refrigerated up to 4 days.
