  • 1 pound brown lentils rinsed and picked clean
  • 1 onion medium, diced
  • 2 carrots medium, sliced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 8 cups vegetable broth
  • 1 can diced tomatoes 14.5-ounce, with juice
  • to taste Salt and pepper

Directions

  • Rinse lentils under cold water to remove dust or pebbles.
  • Add lentils, onion, carrots, celery, garlic, cumin, and coriander to a slow cooker.
  • Pour in vegetable broth and diced tomatoes with juice. Stir to combine.
  • Cook on high for 2.5 to 3.5 hours or low for 5 to 6 hours until lentils and vegetables are tender.
  • Season with salt and pepper to taste and serve hot.

Notes

This soup stores well for meal prep and even improves in flavor after a day or two.
