Instructions
Directions
Rinse lentils under cold water to remove dust or pebbles.
Add lentils, onion, carrots, celery, garlic, cumin, and coriander to a slow cooker.
Pour in vegetable broth and diced tomatoes with juice. Stir to combine.
Cook on high for 2.5 to 3.5 hours or low for 5 to 6 hours until lentils and vegetables are tender.
Season with salt and pepper to taste and serve hot.
Notes
This soup stores well for meal prep and even improves in flavor after a day or two.
