A sweet and savory Korean-style beef dish made in the slow cooker with soy sauce, pear, garlic, ginger, and optional gochujang, cooked until tender and flavorful.
Whisk together soy sauce, brown sugar, mirin, honey, grated pear, onion, garlic, ginger, rice vinegar, and gochujang to make the sauce.
Place beef cubes in the slow cooker and pour the sauce over. Stir to coat all beef pieces evenly.
Cover and cook on low for 6 to 8 hours, until the beef is tender and the float valve has risen.
Let it naturally release pressure. To thicken sauce, mix ¼ cup cooking liquid with cornstarch and stir it back in. Cook for 15-20 more minutes.
Before serving, drizzle with sesame oil and sprinkle with sesame seeds and green onions. Serve over rice or noodles.
Notes
Optional: Brown the beef in oil before placing into slow cooker for extra flavor. Store leftovers in airtight containers for up to 5 days. Freeze in batches for make-ahead meals.
