SLOW COOKER HONEY GARLIC CHICKEN AND VEGGIES

Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs
  • ¼ cup honey Adjust sweetness as per taste.
  • ¼ cup soy sauce
  • 2 tablespoons minced garlic
  • 1 tablespoon fresh ginger, grated
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced Red, yellow, or green.
  • 1 cup broccoli florets
  • 1 tablespoon sesame oil
  • to taste salt and pepper
  • 2 tablespoons green onions, chopped For garnish.
  • optional cooked rice or noodles For serving.

Instructions
 

  • In a mixing bowl, whisk together honey, soy sauce, minced garlic, and grated ginger until well combined. Set aside.
  • Place the chicken thighs at the bottom of the slow cooker. Season with salt and pepper.
  • Add the sliced carrots, bell peppers, and broccoli florets over the chicken.
  • Pour the honey garlic mixture over the chicken and veggies, ensuring everything is well coated. Drizzle sesame oil on top.
  • Cover the slow cooker with the lid, set it on low heat, and cook for 6 hours.
  • Once cooking time is complete, carefully remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker and stir everything to combine.
  • Serve the dish over cooked rice or noodles if desired, and garnish with chopped green onions.

Notes

Feel free to substitute the vegetables based on your preference or seasonal availability – zucchini, snap peas, or corn are great options!
To thicken the sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water, then stir in the slow cooker during the last 30 minutes of cooking.
Adjust sweetness by adding more or less honey according to your taste.
