  • 6 tablespoons Butter for caramelizing onions
  • 4 Large yellow onions sliced into rings
  • 1 tablespoon White sugar for caramelization
  • 2 cloves Garlic minced
  • 0.5 cup Cooking sherry
  • 7 cups Reduced-sodium beef broth
  • 1 teaspoon Sea salt
  • 0.25 teaspoon Dried thyme
  • 1 Bay leaf
  • 8 slices French bread for topping
  • 0.5 cup Shredded Gruyere
  • 0.33 cup Shredded Emmental
  • 0.25 cup Parmesan
  • 2 tablespoons Mozzarella

  • Melt butter in a large skillet over medium heat so it’s nice and hot but not burning.
  • Add those sliced onions and stir often till they turn soft and start caramelizing, about 20 to 25 minutes.
  • About 5 minutes before done, sprinkle sugar and garlic in to help with that sweet tender pull.
  • Transfer caramelized onions to your pressure cooker insert. Pour in cooking sherry, beef broth, salt, thyme, and the bay leaf.
  • Close the lid and set the valve so the cooker can do its pressure build thing. Cook on high pressure about 10 minutes.
  • Once done, go for a slow release so the flavors mellow as the steam escapes. Valve hiss kinda tells you it’s happening.
  • Preheat your oven broiler about 15 minutes before serving. Toast your French bread slices till golden on both sides, just 1 to 2 minutes per side.
  • Ladle soup into oven-safe bowls, float the toasted bread on top, sprinkle with cheeses, then broil till all melted and bubbly, about 2 to 3 minutes. Serve hot and enjoy!

Notes

Freeze leftovers without the bread and cheese toppings. Reheat and broil fresh for next-day comfort. Caramelizing onions is key!
