  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup heavy cream
  • 2 tablespoon corn starch
  • 2 tablespoon tomato paste
  • 14 oz canned diced tomatoes
  • 5 cloves garlic
  • 1 pint cherry tomatoes halved
  • 1 teaspoon dried basil or ½ cup fresh
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • fresh basil for serving, optional

  • Place chicken in the bottom of your slow cooker.
  • Add canned and cherry tomatoes, and roughly smash garlic cloves before adding them in.
  • Add tomato paste, basil, thyme, sea salt, and black pepper evenly on top.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • 30 minutes before serving, whisk heavy cream and corn starch in a bowl until smooth.
  • Add the cream mixture to the slow cooker, stir gently to incorporate without breaking up chicken.
  • Cover and cook on high for an additional 30 minutes to thicken the sauce.

Notes

Top with fresh basil before serving. Great with pasta or roasted vegetables. Leftovers reheat well and can be frozen for up to 3 months.
