  • 1 (5 to 6 pound) Flat cut corned beef with pickling spices
  • 4 to 6 small Potatoes red new potatoes or Yukon Gold, halved if over 2 inches
  • 1 large Onion quartered
  • 1 ½ cups Baby carrots
  • 2 ribs Celery cut into 3-inch pieces
  • 3 cloves Garlic
  • 2 tablespoons Pickling spice optional
  • 2 to 4 cups Beef broth for a rich base juice
  • 1 medium Head cabbage cut in 1-inch wedges

Instructions

  • Place corned beef in the slow cooker or pressure cooker insert. Sprinkle pickling spice over the meat, if using. Pour in beef broth to cover the meat.
  • Layer potatoes, onion, baby carrots, celery ribs, and garlic around the beef.
  • Close lid tight, with float valve down. Cook on high pressure for 75 minutes or slow cooker on low for 8 hours.
  • Before serving, add cabbage wedges on top and cook until tender.

Notes

Serve hot with broth ladled over, alongside rye bread or mustard.
