Ingredients
  

Main ingredients

  • 1 (5 to 6 pound) Flat cut corned beef with pickling spices already on it
  • 4 to 6 Small potatoes red “new” or Yukon Gold, halved if big
  • 1 Large onion quartered
  • 1.5 cups Baby carrots
  • 2 ribs Celery cut into 3-inch pieces
  • 3 cloves Garlic smashed a bit to release flavor
  • 2 tablespoons Pickling spice just in case you want extra
  • 2 to 4 cups Beef broth enough to nearly cover the meat and veggies
  • 1 medium head Cabbage cut into 1-inch wedges to sit on top real nice

Instructions

  • Place corned beef flat cut right into your slow cooker. Sprinkle pickling spice if you have extra.
  • Toss halved potatoes, quartered onions, baby carrots, celery pieces, and garlic all around the beef.
  • Pour beef broth in next, just enough to almost cover everything but not drown it.
  • Arrange cabbage wedges on top like a little crown for the pot.
  • Cover the lid tightly and set the cooker for low for 8 to 10 hours or high for 4 to 5 hours.
  • Once done, slice corned beef against the grain and serve with the veggies.

Notes

Serve with mustard or horseradish sauce on the side for extra flavor.
