  • 1 tablespoon Oil
  • 1 lb Beef stewing meat cut into chunks
  • 1 small Onion finely diced
  • 2 teaspoon Minced garlic
  • 1 teaspoon Salt
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon Black pepper
  • 3 large Carrots peeled and chopped
  • 2 ribs Celery chopped
  • ½ cup Pearl or pot barley rinsed
  • 2 tablespoon Tomato paste
  • 2 Bay leaves
  • 4 cups Low sodium beef broth
  • Fresh parsley for garnish (optional)

Instructions

  • Heat oil in a skillet over medium-high heat until hot.
  • Add beef and brown on all sides. Transfer to slow cooker.
  • Sauté onion, garlic, salt, Italian seasoning, and pepper in the same skillet until soft. Transfer to the slow cooker.
  • Add chopped carrots, celery, and rinsed barley into the slow cooker.
  • Stir in tomato paste, bay leaves, and beef broth until combined.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables and barley are tender.
  • Garnish with fresh parsley if desired and serve hot.

Notes

This recipe makes 2 quarts of soup. One serving is 2 cups. Great for leftovers, and freezes well for meal prep!
